What’s special? Well, this is gluten free, nut free, vegan and sugarless. And tastes great! And all in a food processor – no fuss baking at its best!
1 tin pear halves in juice (c400g)
1/4 cup oil (vegetable, sunflower or a light olive oil)
1/4 cup agave syrup (or honey if you don’t need it to be vegan)
1/4 cup cocoa powder
1 tsp ground cinnamon
1 tsp vanilla essence
175g gluten-free self-raising flour (or regular self-raising if it doesn’t need to be gluten-free)
1. Heat oven to 180C
2. Put everything except the flour into a food processor and whizz until it’s smooth.
3. Add the flour and pulse until it’s a smooth batter.
4. Pour into a lined 7″ round cake time.
5. Bake for 50-60 minutes until a skewer inserted in the centre comes out clean.
6. Cool in the tin.
